Jaime's Oh So Good Chicken Pastel
Ingredients:
3 lbs Boneless chicken thighs
2 Carrots – medium size, cubed
4 Potatoes – medium size, cubed
1 can Pineapple Chunks
1 can Evaporated Milk
½ cup Butter
6 pieces Filipino style Hot Dogs
4 cloves Garlic, crushed
1 large Onion
2 Ginger, stripped
½ tsp Ground Black Pepper
2 Knorr Chicken Cubes
Gold Medal Fish Sauce (Patis) – to taste
Preparation:
Boil chicken together with ginger strips for 10 minutes. Drain chicken, remove ginger strips and cut the chicken into serving pieces.
On a separate pan, sauté garlic and onion in butter until brown. Add chicken, ground pepper and Knorr chicken cubes to the sautéed garlic and onion. Cook for 5 minutes.
Add potatoes, carrots, pineapple chunks and hot dogs. Cover until cooked. Add milk. Add Gold Medal Fish Sauce to taste. Serve hot and enjoy!
