Gold Medal Chicken Tocino Lettuce Wraps

2 packages Gold Medal Chicken Tocino - cooked according to package instructions, then diced into small cubes

Combine with:

1/2 cup water chestnuts, diced into small cubes

2 Tablespoons Gold Medal Soy Sauce

1/4 cup hoisin sauce

3 green onions thinly sliced

1 teaspoon sesame oil

Mix well. Spoon Chicken Tocino mixture into butter lettuce leaves. Enjoy!

Papaya Salad with Gold Medal Chicken Skewers

Ingredients:

1/4 teaspoon freshly grated lime zest

1/4 cup lime juice

2 tablespoons finely chopped palm sugar, or packed brown sugar

2 tablespoons Gold Medal Fish Sauce (Patis)

Hawaiian chilies, or any fresh hot chilies, minced, to taste

3 cups of matchstick-cut or julienne green papaya

1/2 cup very thinly sliced Maui or other sweet onion

1/2 cup pea shoots, cut into 3 inch pieces, or bean sprouts

Freshly ground pepper, to taste

Garnish with chopped Pinoy Gourmet Adobong Mani

1 package Gold Medal Chicken Skewers, grilled on a George Forema grill

1. Whisk lime zest, lime juice, sugar, Gold Medal Fish Sauce, and chilies in a large bowl.

2. Add papaya, onion, and pea shoots to the vinaigrette; toss to combine. Sprinkle with pepper and Pinoy Gourmet Adobong Mani just before serving.

3. Add grilled Gold Medal Chicken BBQ Skewers on top.

Pickled Cucumber Salad with Pinoy Gourmet Chicken Siopao

Ingredients:

2 large cucumbers, peeled and thinly sliced crosswise

1/2 medium red onion, thinly sliced

1 teaspoon sugar

1/4 cup Gold Medal Palm Vinegar (Sukang Paombong)

Coarse salt and ground pepper

In a large bowl, combine cucumbers, red onion, sugar, and Gold Medal Palm Vinegar. Season with salt and pepper, and toss to combine. Serve alongside Pinoy Gourmet Chicken Siopao.
